Noodle Salad


Ingredients:

  • 170 grams of noodles of choice.

  • 1 carrot, peeled into ribbons use a vegetable peeler

  • 2 cups snap peas

  • ½ green peppers, sliced thinly

  • 2-3 stalks spring onion

  • ¼ cup coriander, chopped roughly

  • 2 tablespoon light soy sauce

  • ¼ cup soy sauce

  • 1 tablespoon toasted sesame oil

  • 2 tablespoon rice wine vinegar

  • 1 teaspoon sesame seeds + extra for garnish

Instructions:

  1. Cook noodles according to the instructions on the box. Once they are done, drain and keep them chilled in the fridge until needed.

  2. Make the dressing: in a small bowl whisk together the soy sauces, sesame oil, rice wine vinegar, sesame seeds, half of the spring onions and half of the coriander.

  3. In a large bowl, toss together the chilled noodles, dressing, snap peas, carrots, green pepper, and remaining spring onion and coriander.

  4. Garnish with sesame seeds and any remaining spring onion and coriander.
