Noodle Salad

Ingredients:
170 grams of noodles of choice.
1 carrot, peeled into ribbons use a vegetable peeler
2 cups snap peas
½ green peppers, sliced thinly
2-3 stalks spring onion
¼ cup coriander, chopped roughly
2 tablespoon light soy sauce
¼ cup soy sauce
1 tablespoon toasted sesame oil
2 tablespoon rice wine vinegar
1 teaspoon sesame seeds + extra for garnish
Instructions:
Cook noodles according to the instructions on the box. Once they are done, drain and keep them chilled in the fridge until needed.
Make the dressing: in a small bowl whisk together the soy sauces, sesame oil, rice wine vinegar, sesame seeds, half of the spring onions and half of the coriander.
In a large bowl, toss together the chilled noodles, dressing, snap peas, carrots, green pepper, and remaining spring onion and coriander.
Garnish with sesame seeds and any remaining spring onion and coriander.
