Mango Lime Chia Pudding




Ingredients:

  • 400g can full fat coconut milk

  • ¼ cup chia seeds

  • 2 mangoes, peeled and mashed into rough puree

  • 2 limes


Instructions:


  1. Pour the coconut milk in a medium sized container and whisk to remove the clumps. Add the chia seeds and stir to combine. Put in the fridge for 4 hours or overnight if you can.

  2. Divide the mango puree into four small bowls, reserving about 2 tablespoons as a topping. Top with chia pudding.

  3. Using a grater, grate lime zest over the top of the chia pudding, then cut the lime into wedges and squeeze one wedge over the chia pudding.

  4. Serve with an additional lime wedge.
